We did a shoot with Grey the other day. I wanted cute pictures of him taking a bath. He loved it right away. We had a few incidents with his little bootie sliding but it was fun.

The Best Cheese Dip I've EVER Had & Tofu Tacos
I made the best cheese dip I've ever had. Oh my goodness. I ate it and ate it and now I want more.
BEST. CHEESE. DIP. EVER.
Now, the Tofu tacos are another story. They had tofu, corn, baby spinach, arugula, salsa, and goat cheese in them. They were ok, but not great. To tell you the truth, the tofu was a bit weird. I would try it again, but I could do without as well.
Guacamole Cheese Dip
SERVES 8
INGREDIENTS
1 (16-ounce) can refried beans
3 large avocados
3 tablespoons fresh lime juice
2 (8-ounce) containers nondairy sour cream
1 packet taco seasoning
1/2 cup diced mild green chiles, drained
5 tomatoes, chopped
2 cups shredded Cheddar cheese
STEPS
Preheat the oven to 350 degrees.
Spread a layer of refried beans in the bottom of an 8 inch by 8 inch quart glass baking dish.
Pit and peel the avocados, and place in a bowl.
Mash the avocados together with the lime juice, and spread on top of the refried beans.
Stir together the sour cream and taco seasoning, and spread over the avocado.
Sprinkle the chiles over the sour cream.
Add the tomatoes, and sprinkle with the cheese.
Heat the dip for 15-30 minutes or until heated through and the cheese is a bit melted.
Serve warm or at room temperature.

Homemade Pizza
We made homemade pizza the other night - all from scratch. Yummy! Well, for the most part. We ended up using a recipe that we thought called for wheat flour but we printed the other recipe that called for regular flour. The crust was good, but not perfect. The toppings were delicious. We put feta, goat cheese, marinara, prosciutto and basil on top. The best pizza (even though the crust wasn't perfect) that I've ever had. We will definitely be trying it again.

A Day in the Life
Would it be crazy to say that we have been busy? Our house is a mess, I don't cook, hmm...what do I do? All I do is chase after a crazy, rambunctious toddler. Seriously, I should be way skinny by now.
....a day in the life....
Baby wakes up. 6:45am (7 if I'm lucky).
Banana, milk and cuddles. 7:15am.
Baby runs away before he gets his clothes on for the day. 8am.
....still running
Breakfast 8:30am.
Dressed and at the park. Ready for some water fun. 9:30am.
Back at home. 10:45am. Had lunch (11:30am) and off to nap (12:30pm).
Woke up from nap and wants to cuddle with his Elmie. 2:20pm
Going outside for some fun at the house. 2:30-4.
Getting dressed for the day in regular clothes. 4:30pm.
Outside while dinner is being cooked. 5pm.
Playtime 6-7pm.
BED (YES!) 7:30pm.
Checked in on him at 9pm.
Anyone else tired?

Grilled Garden Salad

Ingredients
2 ear corn on the cob, husks and silk removed
2 small yellow squash, each cut lengthwise into 3 slices
2 small zucchini, each cut lengthwise into 3 slices
2 tomatoes, chopped
1/3 cup KRAFT Zesty Italian Dressing
2 Tbsp. lemon juice
1 clove garlic, minced
3 Tbsp. KRAFT Grated Parmesan Cheese
2 Tbsp. chopped fresh basil ( I used Mint instead and it was delish)
directions
HEAT grill to medium-high heat.
GRILL corn 15 min. or until kernels are browned and tender, turning occasionally; cool slightly. Meanwhile, grill squash and zucchini 5 min. or until tender, turning occasionally.
CUT kernels off cobs; place in medium bowl. Chop squash and zucchini. Add to corn with tomatoes; mix lightly.
MIX dressing, lemon juice and garlic. Add to vegetable mixture; mix lightly. Top with Parmesan and basil.
This recipe came in the Kraft magazine last month. It was super good and easy. The downside is that I saved it for leftovers and its not so good as leftovers. Definitely a keeper.

17 1/2 Months
I'm a bit behind on what Greyson has been up to. We have been super busy playing outside and going to pools. What a life. =)
Gabe's favorite things right now are: playing outside with his sand table, playing in the pool (any pool), trying to eat with a fork, drinking out of a big-boy glass (aka...our glass), Elmo (or Elmie is how he says it), watching the tractor mow the grass on the trail, watching Elmo's World, climbing in and out of his fire truck, eating ice cream, giving hugs, etc.
Throughout the day, he randomly comes up to us and just hugs us. It is so cute. Love it.
The other day, I put him down to bed and I hear "Elmie, Elmie, Elmie." I forgot to put Elmo in bed with him. Since then, Elmo is one of his favorite things. I was up before him this morning and I heard him sit up in bed and just say "elmie....elmie." Adorable just adorable.
